Ingredients

Salad

  • 5 cups Quinoa cooked
  • 10 oz Cherry tomatoes halved,
  • 2 Cucumbers chopped in chunks
  • ½ cup Red onions diced
  • 1 cup Feta cheese crumbled
  • ½ cup Olives drained, halved

Greek Dressing

  • ½ cup Olive oil
  • cup Red wine vinegar
  • 1 tsp Garlic powder
  • 1 tsp Oregano
  • 1 tsp dried Basil
  • 1 tsp Pepper
  • 1 tsp Salt
  • ½ tsp Sugar

Instructions

  • Start by cooking the quinoa according to the instructions on the package. You need the quinoa to be cooled before you can assemble the salad. If you can cook it the night before and store in the refrigerator that is a great option. Or you can cool it after cooking in the fridge for about an hour.
  • Then prepare the dressing by combining all the ingredients in a medium size bowl and whisking well to combine. You can also combine all ingredients in a jar and shake it well to mix. Either way will accomplish the same goal here.
  • Next, slice the tomatoes and drained olives in half.
  • After that, chunk the cucumbers and finely chop the red onion.
  • Combine all veggies in bowl and toss with the prepared salad dressing.
  • Gently stir in feta cheese crumbles and the cooled quinoa. Serve salad cold and enjoy!
