Ingredients

  • ½ cup Butter softened
  • 1 ⅓ cup Flour divided
  • 1 ¼ cup Sugar divided
  • 4 Eggs
  • ½ cup Lemon juice about 2 lemons
  • 2 cups Mixed berries blueberries, raspberries and strawberries are a perfect combination for this recipe

Instructions

  • Preheat oven to 350°F.
  • Grease an 8 x 8 pan with butter or spray with non-stick cooking spray.
  • MAKE THE CRUST: In a medium size bowl, blend together the butter, 1 cup flour, and 1/4 cup of the sugar. Using an electric mixer helps mix the crust more uniformly. Initially this will be crumbly, but as you mix, it will come together like pie dough so be patient. If you don’t see this happen, adding a teaspoon of cold water should fix it.
  • Then, press the dough firmly into the bottom of the prepared baking pan.
  • Bake for 12-15 minutes, the crust should be golden brown when done.
  • MAKE THE LEMON FILLING: In a separate bowl, stir together the remaining 1 cup of the sugar and 1/3 cup flour.
  • Next, whisk in the eggs and lemon juice. This mixture should be nice and frothy.
  • Proceed to pour the mixture over the baked crust.
  • Clean and dice your fresh berries, quarter the strawberries, keep the blueberries whole (unless they are very large, cut them in half) and raspberries keep whole.
  • Sprinkle the berries over the top of the lemon filling.
  • BAKE: Put the baking sheet back in the oven and bake for an additional 20 minutes.
  • Once baking is complete, sprinkle immediately with a little powdered sugar to give them an appealing and beautiful appearance.
  • Make sure you cool these bars completely before serving, this should take about 20-30 minutes depending on the temperature of your house. The lemon will become more firm as it cools. Cut into squares & enjoy!
