- ½ cup butter softened
- 1 ½ cups peanut butter
- 1 cup granulated sugar
- 1 ¼ cups brown sugar
- 3 eggs
- 1 tsp vanilla extract
- 2 tsp baking soda
- 4 ½ cups oats grind into flour in the blender
- 1 cup M&Ms mini or regular
- 1 cup chocolate chips
Prep: Preheat oven to 350°. Line two baking sheets with parchment paper, or silicon mats, and then set it aside.
Grind the oats in your blender or food processor. You don't have to take this step; it can be skipped. However, by blending the oats it creates the most amazing cookie texture!
Cookie dough: In a large mixing bowl, using an electric mixer, cream the butter, peanut butter, sugar, and brown sugar for about 2-3 minutes. Add in the eggs and vanilla extract, mix again well.
Add the oat flour and baking soda, mix into the butter mixture until smooth. Continue to stir in the M&Ms and chocolate chips.
Scoop and bake: Use a medium size cookie scoop to scoop out tablespoonfuls of dough and place on the prepared cookie sheets. Place them in the preheated oven and bake for 8-10 minutes. Let the cookies cool for a few minutes on the cookie sheets and then transfer them to a wire rack to cool completely. Serve and enjoy!
These cookies will stay fresh for up to 5 days if stored in an airtight container at room temperature.
Place them in an airtight container or freezer bag and freeze for up to 3 months. Thaw at room temperature before serving.
