Watermelon Berry Sorbet a refreshing, light and delicious dessert that has become increasingly popular in recent years. This sorbet ice cream is a perfect blend of watermelon and strawberries, making it a great choice for those who want to enjoy a delightful treat.
Prep: Bring the water and sugar to a boil in a small saucepan over medium-high heat. Let it boil while stirring for about 2-3 minutes until all the sugar has dissolved. Remove the pan from the heat and allow it to rest and cool for about 15 minutes.
Cut the watermelon into about 1-2" size cubes that will blend well. Wash and remove the stems from the strawberries. Slice any large berries in half to make the blending process easier.
Blend: Place the water/sugar mixture into a blender and add the watermelon and strawberries. Blend until the mixture is smooth.
Strain & chill: Strain the mixture with a fine mesh strainer to remove any seeds. Pour the sorbet into an 8”x 8” dish and place in the freezer for about 3 hours, or until firm.
Remove the sorbet from the freezer about 10 minutes before serving. Scoop the sorbet into individual serving dishes and enjoy!
Notes
Homemade sorbet will last about 2-4 weeks if stored in an airtight container in the freezer.
