Ingredients

  • 1 cup sliced mushrooms
  • ½ cup onion chopped
  • 1 garlic clove minced
  • 2 Tbsp butter
  • 5 oz pkg frozen chopped spinach thawed and well drained
  • 8 oz cream cheese softened
  • 1 medium tomato chopped
  • ¼ cup milk
  • ¼ cup grated parmesan
  • 1 tsp Italian seasoning
  • ¼ tsp salt
  • ¼ tsp pepper
  • 8-9 oz fresh or frozen cheese filled tortellini cooked and drained

Instructions

  • In a large,pot, saute mushrooms, onions and garlic in butter for about 3-4 minutes over medium heat.
  • Add all remaining ingredients except tortellini and mix well.
  • Cook until mixture just begins to boil. Stir in tortellini and cook until thoroughly heated.
