- 1 cup bananas 2 medium, mashed
- ½ cup brown sugar packed
- ⅓ cup milk
- ¼ cup coconut oil {microwaved for about 20 second to soften}
- 1 egg
- 1 ½ cups whole wheat flour or all purpose if that's what you have on hand
- 3 teaspoons baking powder
- ½ teaspoon salt
- 2 tsp ground cinnamon
- ½ cup miniature semisweet chocolate chips
Prep: Preheat your oven to 400° F.
Then, line a 12 cup muffin pan with paper liners and spray the inside really quickly with some nonstick cooking spray. If you have a silicone cupcake pan just spray with non-stick cooking spray, you should not need paper liners for those. Set aside.
Batter: In a large bowl, start by beat together the bananas, brown sugar, milk coconut oil, and egg with a handheld electric mixer on medium speed.
Next, stir in the flour, baking powder, cinnamon, and salt until just combined and no flour streaks remain. Then, fold in the mini chocolate chips until well combined.
Bake: Proceed to divide the batter evenly amongst the cups using a spoon or pouring from the bowl. Be careful not to spill on the baking pan, those chocolate chips are muffin gold!
Place the muffin pan in the preheated over and bake for 13-18 minutes or until a toothpick can be inserted and come out clean.
When the muffins are finished being baked, remove from the pan and let cool completely. Serve warm and enjoy!
These muffins will stay fresh for up to 5 days if stored in an airtight container at room temperature.
Place them in an airtight container or freezer bag and freeze for up to 3 months. Thaw at room temperature before serving.
