Ingredients

  • 1 tbsp olive oil
  • ½ onion chopped
  • 2 cloves garlic minced
  • 3 cups chicken broth
  • 1 cup half and half
  • 15 oz can pumpkin
  • 3 Tbsp brown sugar
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • tsp ground nutmeg
  • 1 can black beans drained and rinsed

Instructions

  • Add the olive oil to a small skillet and heat over medium heat. Add the onion and garlic and cook for about 5 minutes, or until the onions are soft and translucent.
  • Add the onions and garlic to all the other ingredients in a large pot and cook over medium heat for about 15 minutes, stirring occasionally until soup is heated all the way through.
  • Garnish with sour cream, cilantro and tortilla chip strips.
