Apple Cinnamon Scones

Ingredients

  • 1 Fuji or Honeycrisp apple peeled and chopped in small pieces
  • ¾ cup heavy cream
  • 1 egg
  • ½ tsp vanilla
  • 1 ¾ cups flour
  • 3 Tbsp sugar
  • 2 ½ tsp baking powder
  • ½ tsp cinnamon
  • ½ tsp salt
  • 6 Tbsp cold butter

Cinnamon Sugar Topping

  • 1 Tbsp sugar
  • ¾ tsp cinnamon

Instructions

  • Preheat oven to 350°.
  • In a small bowl, whisk together the heavy cream with the egg and vanilla. Stir in the apple pieces.
  • In another bowl, whisk flour with 3 Tbsp of the sugar, baking powder, cinnamon and salt.
  • Cut butter into 4-5 smaller pieces. Add to the bowl with the flour mixture and use a pastry cutter (or the back of a fork) to mix it in with the other ingredients. Once the butter is fairly well mixed in (will still be in small chunks), add the apples and cream and stir everything together just until combined. Don't overmix!
  • Sprinkle the counter with flour and roll the dough out into a 8 inch circle. Use a pizza cutter to cut into 12 wedges. Place them on a well greased or parchment lined cookie sheet. Mix together the cinnamon sugar topping and sprinkle on top of the scones.
  • Bake scones until golden brown, about 23-25 minutes. Let cool on baking sheets for a few minutes and then transfer them to a wire rack to cool completely. Or just eat them warm like I do!
