Scalloped Corn Casserole

Ingredients

  • 29.5 oz cream style corn two 14 oz cans
  • 14.5 oz whole kernel corn
  • 2 eggs
  • ½ cup butter melted, divided
  • 2 cups ritz crackers crushed
  • 1 tablespoon parsley dried
  • 1 cup cheddar cheese shredded

Instructions

  • Preheat oven to 350° and spray 9x9 baking pan with nonstick spray.
  • In a large bowl combine cream corn, whole corn, eggs, and a ¼ cup melted butter.
  • Pour corn mixture into the baking pan.
  • Sprinkle the remaining cheese evenly over the top.
  • In a small bowl combine remaining butter and crushed ritz crackers and mix till well combined.
  • Spread the ritz mixture evenly over the cheese.
  • Place in the oven and bake till bubbly and top has browned about 30-40 minutes
  • Remove and serve with your meal. Enjoy!

Notes

Will keep refrigerated in an airtight container or sealed with cling wrap for up to 7 days.Will also freeze well for up to 3 months.  To thaw, place in the refrigerator overnight.
