Ingredients

  • 3 peaches sliced & peeled (about 3 cups)
  • ¼ cup water
  • ¾ cup half & half
  • 1 tbsp sugar to taste
  • 1 tbsp vanilla extract

Instructions

  • Prep: Get started by peeling the fresh, ripe peaches and remove the pits. Then slice into thin slices, cut each half into 6 slices if you can.
  • Cook: Next, in a saucepan, over low heat, combine the sliced peaches, water, half& half, sugar and vanilla extract. Stir all ingredients together until the sugar has dissolved. Continue to cook on low for 10 minutes, stirring frequently. Then let the mixture cool for about 5 minutes.
  • Blend: Proceed to transfer the contents in the saucepan into a blender and then blend until nice and smooth.
  • Chill: After that, place the peach soup mix in a covered container and put in the fridge to chill for at least 2 hours, until ready to serve. Believe me, this soup is meant to be served chilled, so it is important to not skip this step.
  • Serve: When you are ready to serve, pour soup into individual serving bowls, then top each bowl with mint leaves, a few drops of cream, or even more fresh fruit. Serve and enjoy!
