- 1 1/3 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup butter softened
- 3/4 cup granulated sugar
- 2 eggs room temperature
- 1 teaspoon vanilla extract
- zest from 1 lemon
- 2 tablespoons lemon juice
- 3/4 cup plain greek yogurt
- 2 tablespoons poppy seeds
Lemon Glaze
- 1 cup powdered sugar
- 2-3 tablespoons lemon juice
- optional: lemon zest poppy seeds for sprinkling
Preheat oven to 350°F. Line a muffin pan with cupcake liners.
In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
In a large bowl, beat the butter and sugar. Mix in eggs. Beat in the yogurt, lemon zest, juice, and vanilla.
Add dry ingredients to wet ingredients and mix until just combined. Stir in poppy seeds.
Fill the muffin tins about 2/3 full with the batter. Bake for 12-15 minutes, until an inserted toothpick comes out clean. Allow to cool on a wire rack.
For the icing, whisk the ingredients together until smooth. Using a teaspoon or a piping bag, drizzle the icing over the cooled muffins. Sprinkle with additional zest and poppy seeds.
