Frosted Applesauce Cake

Ingredients

  • 2 1/2 cups all purpose flour can use Bob’s Red Mill One-to-One gluten free flour instead
  • 1 1/2 cups sugar
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp allspice
  • 1/2 tsp cloves
  • 1/2 cup butter 1 stick, softened
  • 1/2 cup water
  • 16 oz unsweetened applesauce
  • 1 egg
  • 1/2 cup raisins or chopped apples
  • 1/2 cup chopped pecans or walnuts optional
  • chopped pecans or walnuts for topping optional

Buttercream Frosting

  • 1/2 cup butter 1 stick, softened
  • 2 TBSP evaporated milk
  • 1 tsp vanilla extract
  • 3 cups powdered sugar

Instructions

  • Preheat oven to 350 degrees F.Grease a 13x9 baking dish.
  • In a large bowl, mix the dry ingredients together and stir to combine. Add in softened butter and water. Beat for 1 minute.
  • Add applesauce and egg. Beat for 3 minutes.
  • Gently stir in raisins and chopped nuts, if using.
  • Pour into greased baking dish. Bake for 30 minutes or until toothpick comes out clean.
  • Cool on wire rack completely before spreading with frosting and topping with additional nuts, if preferred.

Buttercream Frosting

  • Place all ingredients in a big mixing bowl. Use a hand mixer or electric mixer & beat at medium speed for 3-4 minutes until creamy.

Notes

Notes:
  • Batter can be used to make 24 cupcakes – bake for 20-25 minutes
  • Batter can be used for Bundt cake – Bake for 45-50 minutes.
Frosting:
  • Yields: frost sheet cake or layer cake or 24 cupcakes
