Ingredients

  • 2 1/3 cup all-purpose flour
  • 1/3 cup Old Fashioned oats
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp packed brown sugar
  • 3/4 cup shortening
  • 1/4 cup cold butter, cut into small pieces
  • 1 egg
  • 1 tbsp vinegar
  • ice water

Apple Filling

  • 4-5 apples, peeled, cored & sliced
  • 1/4 cup flour
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup butter, cold, cut into cubes

Crumb Topping

  • 1 cup Old Fashioned oats
  • 3/4 cup packed brown sugar
  • 1/2 cup butter, cut into pieces
  • 1/2 cup chopped walnuts or pecans

Instructions

Pie Crust

  • Stir together flour, oats, baking powder, salt and brown sugar. Cut in shortening with pastry cutter. Add small pieces of butter while continuing to mix.
  • Mix together egg, vinegar and enough ice water to measure 1/2 cup. Add to flour mixture and mix well.

Apple Filling

  • Toss everything into a large bowl and stir to combine. Let the apples sit in the fridge until you're ready for them.

Crumb Topping

  • Combine all ingredients until crumbly using a pastry cutter, 2 forks, or whatever you think will work!

Assembling the Apple Pie Bars

  • Preheat oven to 375 degrees F. While the oven is preheating, mix up the pie crust. Spray a 9x13 glass baking dish with non-stick spray.
  • Transfer crust to pan and press to cover, even going up the sides. Make adjustments around the edges of the crust by trimming from a too-long edge and filling in on a shorter edge. Make the crust go all the way up to the top of the sides as it will shrink down a bit after baking. Take a fork and poke about 10 times along the bottom of the dish.
  • Bake the crust for 10-12 minutes, until lightly browned.
  • Dump apple mixture on top of the baked crust. Spread evenly. Sprinkle with Crumb Topping (pan will be full). Top with remaining 1/4 cup butter cubes.
  • Bake for 40 to 45 minutes or until apples are tender. If necessary to prevent over-browning, cover top with foil for the last 5 to 10 minutes of baking. Cool slightly in pan on a wire rack. Serve topped with whipped cream or vanilla ice cream, & caramel topping
  • Store in the fridge. Re-heat the next morning and enjoy for breakfast!

Notes

Recipe can be doubled and baked in an 11x15 jelly roll pan.
