Honey Oat Quick Bread

A delicious sweet and healthy bread that's fun and easy to make and even more fun to eat. You're going to love it!

Ingredients

  • 1 cup Oats
  • 2 cups Whole Wheat Flour
  • 1 cup All Purpose Flour
  • 1/4 cup Honey
  • 1 tsp Baking Soda
  • 1 tsp Cream of Tartar
  • 3/4 tsp Salt
  • 1/4 cup Cold Butter Cut into pieces
  • 1 Egg
  • 1 1/3 cup Buttermilk or 1 1/3cupmilk + 1tbsp lemon juice
  • 1/4 cup dough enhancer

Instructions

  • Preheat the oven to 375 degrees. Spray cooking spray on a baking sheet. 
  • Mix together: oats, flours, honey, baking soda, cream of tartar and salt. Cut in butter using 2 knives or with a pastry cutter
  • Beat egg in with the milk. Slowly add to the dry mixture, mixing while adding. Once the dough is well mixed, turn it out onto a counter top with flour. Sprinkle more flour on top.
  • Knead dough lightly, until you've managed to shape it into a nice circle. {About 7" in diameter} The dough is sticky, so you don't want to knead it a ton or you'll have to keep adding flour, which will dry out the bread. This whole process of kneading and shaping shouldn't take more than a couple minutes.
  • Transfer bread to the cookie sheet. Cut 2 quick lines in the top of the bread in an X shape. Brush bread with a little milk and sprinkle with additional oats.
  •  Bake in a 375 degree oven for 35-50 minutes, or until a toothpick inserted in the center comes out clean. ENJOY!

Notes

I know 35 to 50 minutes is quite the spread and the time it requires to bake really depends on the shape. My loaf was a smaller in diameter circle, so it took the full 50 minutes to cook. If you want it to cook in less time, shape the dough into more of a loaf- longer instead of taller and it will cook faster.
