Loaded Baked Potato Rounds are quick and easy to make. Baked potatoes sliced thin and topped with bacon, cheese and sour cream! Perfect appetizer or side dish.

  • 6 medium sized red potatoes washed and sliced into thin rounds
  • Olive oil
  • Salt & pepper
  • 6 strips of bacon cooked until crisp, crumbled
  • Shredded cheese I used Colby-Jack
  • Dollop of sour cream

  • Preheat oven to 375ºF. Line a baking pan with aluminum foil and coat foil with non-stick spray.
  • Slice potatoes thin. Put the sliced potatoes in a pot filled with water and bring to a boil. Cook for 3-5 minutes until tender.
  • Drain potatoes and line them on the baking pan. Brush with olive oil, salt, and pepper (and other spices as desired). Add bacon crumbles and cheese.
  • Bake for 10 minutes until melted. Add a dollop of sour cream (if desired).
