Loaded Baked Potato Rounds
Loaded Baked Potato Rounds are quick and easy to make. Baked potatoes sliced thin and topped with bacon, cheese and sour cream! Perfect appetizer or side dish.

Ingredients
- 6 medium sized red potatoes washed and sliced into thin rounds
- Olive oil
- Salt & pepper
- 6 strips of bacon cooked until crisp, crumbled
- Shredded cheese I used Colby-Jack
- Dollop of sour cream
Instructions
Preheat oven to 375ºF. Line a baking pan with aluminum foil and coat foil with non-stick spray.
Slice potatoes thin. Put the sliced potatoes in a pot filled with water and bring to a boil. Cook for 3-5 minutes until tender.
Drain potatoes and line them on the baking pan. Brush with olive oil, salt, and pepper (and other spices as desired). Add bacon crumbles and cheese.
Bake for 10 minutes until melted. Add a dollop of sour cream (if desired).
