Ingredients

  • 15 oz corn kernels, drained
  • 15 oz black beans, drained
  • 15 oz kidney beans, drained
  • 2 oz sliced black olives
  • 1 red pepper, diced
  • 1 cup white onion, diced
  • 3 roma tomatoes, diced
  • 1 oz taco seasoning packet

Instructions

  • Open and drain cans of corn, black beans, kidney beans and olives. Combine in a large bowl.
  • Dice the pepper, onion and tomatoes and add to the bowl.
  • Sprinkle the ingredients in the bowl with the taco seasoning packet and stir to combine and season.
  • Garnish with avocado slices, cilantro, green onion and tortilla strips if desired.
  • Serve chilled with tortilla chips.
