Perfect Crispy Belgian Waffles

  • 3/4 c. flour
  • 1/4 c. cornstarch
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 2 tsp. sugar
  • 2 eggs
  • 2 tbsp. butter melted
  • 1 c. milk
  • 1 tsp. vanilla


  • Preheat oven to 200 degrees F. Heat waffle maker
  • Mix the flour, baking powder, salt and sugar using a whisk to combine well.
  • Beat the egg yolk with a whisk until smooth. ¬†Stir in the milk, vanilla, and butter.
  • Combine the milk mixture with the dry ingredients. Stir until mostly smooth.
  • Whisk the egg white to stiff peaks using an electric mixer or blender.
  • Carefully fold the egg whites into the batter. Cook waffles according to waffle maker instructions.
  • Place waffles directly on the oven racks until ready to serve. (And don't stack them!)


Yields 3-4 Belgian waffles, depending on size of waffle maker. Recipe can be doubled and/ or tripled.
