How to Bake Sweet Potatoes

- 3 sweet potatoes
- 2 TBSP butter
- 1/2 cup mini marshmallows
- 1/8 tsp salt
Preheat your oven to 400 degrees F.
Scrub your sweet potatoes and cut off the ends. Place on a baking sheet lined with foil, parchment paper or teflon baking mats.
Bake for about 45 minutes to an hour. I baked my 2 medium sized potatoes for 1 hour. Adjust the time if your potatoes are larger or smaller. If you're unsure when they're done, the inside should read 210 degrees F.
Cut a large "X" onto each potato and pull back the skin a bit. It will just peel away easily. Sprinkle with a little salt and dot with butter. Add about 1/4 to 1/3 cup of mini marshmallows to the top of each potato. Return to the oven to broil for 2-3 minutes, or until marshmallows are toasted a light golden brown.
Serve sweet potatoes after they've been able to cool down for about 5-10 minutes.
