Ingredients

  • ½ cup heavy whipping cream
  • 2 Tbsp maple syrup
  • 2 cups Krusteaz Buttermilk Pancake mix
  • cup cold water or milk
  • fresh fruit raspberries, blueberries, bananas, etc.

Instructions

  • Cream filling: In a large bowl, use an electric mixer to beat the heavy whipping cream until stiff peaks form. This usually takes about 5 minutes. Then, fold in the maple syrup until incorporated and keep refrigerated until ready to use (will last up to 3 days).
  • Pancakes: Next, measure out the pancake mix and add to a medium size mixing bowl. Then add in the water (or milk if you prefer) and whisk together until the mixture is mostly lump free. Continue to cook them according to the directions on the Krusteaz Buttermilk Pancake mix package. This recipe will create about 12 pancakes total, to create 6sandwiches.
  • Assemble: Proceed to let the pancakes cool for just a couple of minutes and then spread some of the maple whipped cream on one side of a pancake. Add whatever fresh fruit you desire and then place another pancake on top, making a sandwich. Serve immediately and enjoy!
