Preheat oven to 400°.
Pour the apple pie filling out onto a plate and cut each apple slice into small chunks.
Follow the directions on the pie crust mix (each brand is a little bit different).
Roll the pie crust out until thin, about 1/4 inch.
Use a cookie cutter to cut out round circles. I used a 4 inch circle cookie cutter.
Spoon a small amount of the pie filling into the middle of each circle.
Carefully, fold the circle pie crust in half, use a fork to crimp the edges. Cut two slits in the top of the pie crust to allow steam to escape.
Repeat with remaining circle pie crusts.
Gather up the pie crust scraps and repeat.
When all of the hand pies have been made, bake at 400° for 15-20 minutes, or until golden brown.
Wait a few minutes before covering with glaze.
For the Glaze: Mix the butter, powdered sugar, milk and vanilla together until smooth using a hand mixer or stand mixer.
Dip and roll the hand pies in the glaze, sprinkle with cinnamon and sugar if desired.
Let cool before serving.
