SLOW COOKER MADRAS LENTILS

Slow Cooker Madras Lentils are full of red beans, lentils, tomatoes and wonderful spices. This madras lentils recipe is so simple to make, just toss some ingredients in a slow cooker and walk away!

Ingredients

  • ½ lb dried lentils
  • 1 4- oz can diced green chilis
  • 1 15- oz can small red kidney beans
  • 1 28- oz can crushed tomatoes
  • 1 medium onion minced
  • 6 cups beef or vegetable broth
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • ½ cup heavy cream
  • Salt and pepper to taste

Instructions

  • Prep: Start by mincing the onion into small pieces.
  • Assemble: Next, in the pot of a slow cooker or crock pot, combine the lentils, diced green chilis, red kidney beans, diced tomatoes, minced onion, beef broth, chili powder, and cumin (this is everything except the heavy cream, salt and pepper). Stir the ingredients to combine. Proceed to cook on low heat for 4-5hours.
  • Complete & Serve: Once cooking is complete, stir in the heavy cream. Then, using a immersion blender (or a standard blender or food processor, in batches), puree the mixture until it is the desired thickness.
  • Then, add salt and pepper to your taste preference. Serve alone as a soup or serve over rice with a little bit of cheese and/or sour cream. Enjoy!
