Ingredients

  • cup oil
  • 1 cup sugar
  • 1 egg beaten
  • 1 ½ cups flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ½ tsp nutmeg
  • ½ cup milk

  • ½ cup butter melted
  • ½ cup sugar
  • 2 tsp cinnamon

Instructions

  • Prep: Begin by gathering all the necessary ingredients and then get the oven preheating to 350° F.
  • Batter: In a mixing bowl, cream the oil and sugar until well combined. Add in the beaten egg and mix until the batter is smooth.
  • Add in the dry ingredients, including the flour, baking powder, salt, and ground nutmeg. Mix everything until the batter is well combined. Add in the milk and stir until the batter is well mixed.
  • Bake: Grease a muffin pan with cooking spray and pour the batter into each muffin cup, filling them about three-quarters of the way full. Place the muffins in the preheated oven and bake for 20-25 minutes, or until they are lightly browned, and a toothpick inserted in the middle comes out clean.
  • Let them cool in the pan for 10 minutes before removing them and placing them on a wire rack to cool completely.
  • Cinnamon Sugar Topping: Melt the butter in a small bowl and mix the sugar and cinnamon in a separate bowl.
  • Roll each muffin in the melted butter, then immediately roll it in the cinnamon sugar mixture until it is well coated. Serve and enjoy!

Notes

Cinnamon sugar donut muffins can be stored in an airtight container at room temperature for up to 3-4 days.
