LOADED MEXICAN CHICKEN SWEET POTATO FRIES

This one-dish meal comes together in minutes and the whole family is sure to love these crispy sweet potato fries topped with chicken, beans, cheese, and a delicious garlic avocado sauce.

Ingredients

  • 1 package Alexia® Sweet Potato Fries
  • 1 package NatureRaised Farms® Gluten Free Frozen Grilled Chicken Strips
  • 1 tsp garlic salt
  • 1 tsp Chipotle seasoning
  • 1/2 cup diced onions
  • 1 can corn drained
  • 1 can black beans rinsed and drained
  • 2 cups shredded cheese colby jack, cheddar or Mexican blend

Garlic Avocado Sauce

  • 1 large avocado pitted and scooped from skin
  • 1/3 cup mayonnaise
  • 3 cloves garlic or 3 tsp minced garlic
  • 1/3 cup green salsa
  • 1/3 cup milk

Instructions

  • Bake the Alexia® Sweet Potato Fries according to package directions.
  • While the fries are baking, place the chicken strips in a saucepan and add the garlic salt, Chipotle seasoning and onions. Cook over medium heat for about 5-6 minutes.
  • You'll also have time to make the Garlic Avocado sauce while the fries are baking. Place the avocado, mayonnaise, garlic, green salsa and milk in a blender and process until smooth. If you want the sauce to be a little thinner, you can add a little bit more milk.
  • Once the fries are done baking, sprinkle the chicken mixture over the top of the fries and then layer the corn, black beans, and shredded cheese on top.
  • Place the fries back in the oven at 425 for about 8-10 minutes or until cheese is melted. Serve immediately and drizzle with the sauce. A one dish meal that everyone will love!
