- 1 ½ cups all-purpose flour
- 1 cup rolled oats
- ½ cup brown sugar
- 1 tbsp baking powder
- 1 tsp ground cinnamon
- ¼ tsp salt
- 1 egg
- 1 cup milk
- ¼ cup oil vegetable, canola or coconut
- 1-2 cups fresh blueberries
Oat topping
- 2 tbsp rolled oats
- 1 tbsp sugar
- ¼ tsp ground cinnamon
Preheat oven to 400°. Line 12 muffin cups with liners or grease the bottoms of each muffin well.
In a large bowl, combine flour, oats, brown sugar, baking powder, cinnamon and salt.
In a small bowl, whisk egg, milk and oil together. Add to the dry ingredients and stir just until barely combined. Do not over mix! Fold in blueberries.
Pour batter into prepared muffin cups (each should be about ¾ full).
Mix topping ingredients together and sprinkle evenly over the batter.
Bake for 18-20 minutes or until golden brown. Let the muffins cool in the pan for about 5 minutes before removing the muffins from the pan and letting them cool on a wire rack.
