BLUEBERRY OATMEAL MUFFINS

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup rolled oats
  • ½ cup brown sugar
  • 1 tbsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • 1 egg
  • 1 cup milk
  • ¼ cup oil vegetable, canola or coconut
  • 1-2 cups fresh blueberries

Oat topping

  • 2 tbsp rolled oats
  • 1 tbsp sugar
  • ¼ tsp ground cinnamon

Instructions

  • Preheat oven to 400°. Line 12 muffin cups with liners or grease the bottoms of each muffin well.
  • In a large bowl, combine flour, oats, brown sugar, baking powder, cinnamon and salt.
  • In a small bowl, whisk egg, milk and oil together. Add to the dry ingredients and stir just until barely combined. Do not over mix! Fold in blueberries.
  • Pour batter into prepared muffin cups (each should be about ¾ full).
  • Mix topping ingredients together and sprinkle evenly over the batter.
  • Bake for 18-20 minutes or until golden brown. Let the muffins cool in the pan for about 5 minutes before removing the muffins from the pan and letting them cool on a wire rack.
