Ingredients

  • 8 ounces pumpkin purée
  • 2 large eggs
  • ½ cup vegetable oil
  • cup orange juice
  • 1 cup sugar
  • 1 ¾ cups flour
  • 1 teaspoon baking soda
  • ¾ teaspoons salt
  • ½ Tbsp pumpkin pie spice
  • 2 cups fresh or frozen cranberries

Instructions

  • Preheat oven to 350°.
  • Spray a 9x5 bread pan with cooking spray and flour the pan to ensure the loaf doesn’t stick.
  • In a large bowl, add the pumpkin purée, eggs, vegetable oil, orange juice, and sugar. Whisk to combine and set aside.
  • In a smaller bowl, add the flour, baking soda, salt, and pumpkin spice and whisk together.
  • Then, pour the flour mixture into the large bowl with the wet ingredients and whisk together, do not over mix.
  • Add the cranberries and gently fold them into the mixture.
  • Pour into the bread pan and bake in the oven for 55-60 minutes. Check with a toothpick for doneness.
  • Remove from the oven and let it cool in the pan for at least 5 minutes before removing. Slice and enjoy!
