SWEET HAWAIIAN CROCK POT CHICKEN

Ingredients

  • 5 chicken breasts or 8 chicken thighs
  • ¼ tsp salt
  • ¼ tsp pepper
  • 8.25 oz pineapple slices
  • 8 oz sliced water chestnuts
  • 1 cup chicken broth
  • ¼ tsp ground ginger
  • 1 clove minced garlic

Sauce

  • ¼ cup soy sauce
  • ¼ cup cornstarch
  • 1 TBSP rice vinegar

Serving suggestions & Garnish

  • ½ cup sliced green onions
  • 6 TBSP chow mein noodles
  • 6 cups hot cooked rice

Instructions

  • Assemble: Place chicken in slow cooker. Sprinkle chicken with salt and pepper, turning over to coat both sides.
  • Drain the can of pineapple and reserve the liquid syrup, then quarter the pineapple slices and arrange them over the chicken slices.
  • Drain the water chestnuts and pour those over the chicken as well.
  • In a small bowl, combine the reserved pineapple syrup, chicken broth, ginger, and minced garlic; whisk ingredients and then pour it over the chicken.
  • Cook: Cover and cook on low 8 to 9 hours or until chicken is tender. Remove chicken from cooker with a slotted spoon; keep warm. Reserve cooking liquid in cooker. Increase heat to high.
  • In a small bowl, combine the soy sauce, cornstarch, and vinegar, stirring with a whisk until well blended. Proceed to stir the cornstarch mixture into cooking liquid in cooker. Cook, uncovered, for 10 minutes or until slightly thickened, stirring frequently.
  • Serve: Serve the chicken and sauce over rice. Top with green onions & chow mein noodles. Enjoy!

Notes

When storing the chicken, make sure to store in an airtight container and use it within 3-4 days. To reheat, simply microwave or heat on the stovetop until warmed through.
For longer storage, the chicken can be frozen. Allow the chicken to cool to room temperature before transferring it to a freezer-safe container or bag. Label the container with the date it was cooked and freeze for up to 4 months.
