No Bake Peanut Butter Cookies are the perfect dessert when you need something sweet, but you do not wait for something to bake. These little sweets can be devoured within just a couple minutes of making them. I love the crunch that is added by the Special K cereal, making these cookies a little bit crunchier than a traditional no bake cookie recipe. I like to drizzle mine with a little bit of melted semi-sweet chocolate to make them look a little fancier but they taste amazing without it too!

No Bake Peanut Butter Cookie Ingredients
Sugar: Add in 1 cup of sugar to give these cookies just enough sweet flavor.
Brown sugar: Using ½ cup of brown sugar will give these cookies a wonderful depth of flavor.
Corn syrup: You need 1 cup of light corn syrup to add even more amazing flavor to this no-bake treat.
Peanut butter: Use 1 ½ cups of peanut butter to help bind all the ingredients together. I like to use crunchy peanut butter for this recipe, the peanut addition works great in this recipe.
Vanilla extract: Adding in 1 teaspoon of vanilla extract will help balance all the great flavors in this simple yet delicious, cookie recipe.
Cereal: You will need 6 cups of Special K cereal for the base of this crispy cookie recipe.
Step by step on how to make No Bake Peanut Butter Cookies
In a medium sauce pan, combine and stir together the sugar, brown sugar and corn syrup and cook over over medium heat. Proceed to bring the mixture to a boil and then remove from the heat.
After that, add in the peanut butter and vanilla extract and stir until smooth.
Next, stir in the cereal and mix until the cereal is well covered with the peanut butter mixture. Then, drop teaspoons full of the cookie mixture onto waxed paper. If you want to shape the cookie slightly while it is on the spoon, just use your hands to shape them into a ball.
If you want a little chocolate drizzle on top, melt 1 cup of semi-sweet chocolate chips in the microwave, stirring every 30 seconds until melted and smooth. Place the melted chocolate in a plastic sandwich bag and snip a tiny hole in one of the bottom corners so you can squeeze out the chocolate. Drizzle over the cookies right after they are formed.
Let the cookies cool on the wax paper for about 20 minutes, then serve and enjoy!

- 6 cups Special K cereal

HOW LONG DOES IT TAKE FOR NO BAKE COOKIES TO SET?
These no bake cookies only take about 15-20 minutes to cool and set at room temperature, but you can reduce that time by at least half, if you let them chill in the refrigerator. Just make sure to remove them from the refrigerator once set, the taste and texture of these cookies are best when at room temperature.
DO NO BAKE COOKIES NEED TO BE REFRIGERATED?
No, these no bake cookies can be stored at room temperature for up to 1 week as long as they are stored in an airtight container.
ARE NO BAKE COOKIES DAIRY AND GLUTEN FREE?
Traditional no bake cookies have milk and butter in them, but this version does not, which makes them dairy free and delicious! These can also be GF cookies if you use the gluten free Special K cereal option. This is a great recipe to make for many reasons, but dairy and gluten free do make them an extra amazing treat option.
