Tomato soup is one of my favorites so when I had the idea to cross it with a french onion soup, I knew it’d be good! I wasn’t disappointed- it’s smooth and velvety with a wonderful bright, rich flavor. It’s perfect for dipping grilled cheese on a cold day. The tomatoes you use have a big effect on this recipe since it’s the main ingredient. I used Hunts Fire Roasted Diced Tomatoes- not only do they taste incredible, but they’re super simple to keep on hand in your pantry. Hunt’s process their tomatoes differently than other brands and you can taste the difference. Tomatoes are vine ripened and are canned within hours of being picked. Their tomatoes are peeled using steam- no chemicals involved. All this helps their canned tomatoes to be sweet, flavorful and ready to be made into soup!

How to make tomato soup
Our French Onion Tomato Soup is easy to make! First you’ll caramelize the diced onions. Add them to a skillet along with the garlic and thyme. Turn the heat up to medium high and add about 1/4 cup of water. Onions will soften and sizzle. If you add water each time it evaporates the onions will caramelize faster! You’ll then add 2 cans of diced tomatoes. I like using Hunt’s Fire Roasted Diced Tomatoes because they are delicious. Also add beef broth (or vegetable broth) butter and some brown sugar. Cook until hot, then you’ll use an immersion blender to puree the soup until smooth. I like to serve my tomato soup topped with fresh basil, Parmesan cheese and croutons.
What do you serve with tomato soup?
I like to serve tomato soup for lunch or dinner, topped with grated Parmesan cheese, fresh basil and garlic croutons. I love serving it with a small side salad and fresh bread in any form. Dipping bread into this soup is truly the best!
French Onion Tomato Soup Recipe ingredients
- 1 medium sized sweet onion, chopped
- 1 tsp minced garlic
- 1/2 tsp thyme
- 4 TBSP butter
- 2 cans Hunt’s Fire Roasted Diced Tomatoes
- 1 cup beef broth
- 1 TBSp brown sugar
- water
- sliced baguette topped with cheese, for garnish
How to make Homemade Tomato Soup
- Add the onion, garlic, thyme and 1/4 cup water to a hot pan. Cook over medium high heat for 15 minutes, stirring occasionally and adding an additional 3 TBSP water every 4-5 minutes. Onions should caramelize and turn dark brown in color.
- Add in butter, tomatoes, broth and brown sugar. Cook on medium heat until bubbling, then decrease heat and simmer for 20 minutes.
- Blend until smooth. Top with toasted baguette and cheese. Sprinkle with fresh basil, if desired. Serves 3-4.

Can tomato soup be frozen?
Yes, you can freeze tomato soup! Just double the recipe and make a big batch, then spoon half into an airtight freezer container. I store tomato soup in the freezer for up to 4-6 months. When you’re ready to eat it, just defrost on the countertop, then transfer the soup to a saucepan and heat over medium until just barely bubbling. You can also reheat tomato soup in the microwave. Dinner is served!
What herbs and spices go in homemade tomato soup?
I added dried thyme and minced garlic to this tomato soup recipe to give it an extra punch of flavor. You’re welcome to use 1/2 tsp garlic powder instead. I use beef broth in the soup also to give it added flavor, but you’re welcome to use vegetable broth if you’d prefer.
What tomatoes do you put in a tomato soup recipe?
I’ve made tomato soup with fresh tomatoes and while it is delicious, this version is just as good and so much faster! I like using Hunt’s Fire Roasted Diced Tomatoes because they are delicious. You’ll use two 14.5 oz cans. Once you heat the tomatoes with the rest of the soup, you’ll use an immersion blender to puree it all together.
Is tomato soup vegan? Is tomato soup gluten free?
You can make my tomato soup recipe both vegan and gluten free by leaving out the butter and using vegetable broth in place of beef broth. The texture and flavor will be minimally affected; you’ll just lose a bit of richness to the recipe. Top the tomato soup with cornbread croutons marked as gluten free and fresh basil.

I’m pretty sure it’s supposed to go in with the garlic, onion & Thyme. That’s what caramelizes the onion. The recipe never does call for it???

I apologize- I understand her comment now! The brown sugar balances the acidity of the tomatoes. It goes in with the broth and tomatoes, near the end. The water is what helps caramelize the onions, surprisingly. I updated the recipe to make it more clear. Thank you! 🙂

Since the late 70s, my mom made her french onion soup with tomatoes. So when I moved out on my own I adapted hers to make a family staple in our house. I use tomato sauce & crushed tomatoes though, she used V8. Mine is usually heartier and slightly thicker, but the rest is basically her standard. Three to four diced onions (yours sounds amazing, but honestly, not enough onion to be a french onion soup, lol.), the crushed tomatoes and tomato sauce, beef or mushroom broth (mushroom if I want to make it vegan), garlic and bay leaves. Always bay leaves. And I always caramelize the onions in unsalted butter and deglaze with sherry.
In recent years I have adapted mine to cook in the instant pot and tonight, for a change up, I added a bag of frozen cheese ravioli…we do not put the toasted bread and shredded cheese in our individual bowls, we eat it with either toasted garlic cheese bread or grilled cheese.

I only made 2 changes – First I used 10 fresh Roma tomatoes and then changed out the brown sugar 1 tablespoon white sugar. Then cooked the whole thing in my electric pressure cooker on the Soup icon for 15 minutes. And then, of course, pureed the whole thing – yum. I can control the sodium and make sure there are no preservatives in this soup by using fresh tomatoes, as I am highly allergic to MSG. Thanks for posting a great recipe.
