I made this bread yesterday, It is delicious! The only thing I changed was using a bundt pan to cook it in. I’ll made it again!!

In reply to Dewayne. It definitely sounds like something didn't go quite right. I double checked the measurements and everything looks good. Did you notice if your zucchini was overly watery? Was it a large home grown zucchini?

I don’t know what happened. I followed the recipe exactly. I inserted a tooth pick and then a knife they came out clean after 60 minutes. But when I tried to take them out of their pans they were a gooey mess in the center flipped them back onto a cookie sheet baked for another 20 mins crisp an outside now but still soft mess in th the center. Are you sure it takes a cup of oil? Not happy with the results.

Best zucchini bread I have ever made. Super soft and moist. You get bites with apple and it’s just awesome. Sent two loafs with my boyfriend to work. 7 guys ate 2 loafs in less than 3 hours. I’d say they liked it. Saving this recipe. I did use the nutmeg added it with the dry ingredients. Also added the nuts. I’m telling you best zucchini bread ever!

We all loved thos recipe! Next time I will try adding 2 apples instead of 1 – I didn’t measure and wanted more apple.

In reply to AJH. I never squeeze the liquid out of the zucchini. Even from my garden zucchinis which generally have way more water in them. Some people say they do every time and swear by it, ha! I'd say don't worry about it, unless you have a monster garden zucchini that pools with water after you shred it!
