I spend a lot of time in the kitchen and I do a LOT of baking. So trust me when I say that this popcorn tastes as good as it sounds. This delicious popcorn recipe is a perfect snack for any occasion. WHAT IS THE BEST KIND OF POPCORN TO USE IN THIS RECIPE?
You can use microwave popcorn, air-popped popcorn, or you can use my favorite stove-popped popcorn that is made with coconut oil. I have not used microwave popcorn in quite a while because I love this version so much. At first it was because of the fact that I kept reading things about how it was so bad for you, but then once I started making my own popcorn on the stove, I realized how much better fresh popcorn tastes! If you haven’t tried it yet, it’s so easy and it’s so much yummier too.
PUMPKIN SPICE MARSHMALLOW POPCORN TREAT INGREDIENTS
Popcorn: The base of this delicious treat is 8 cups of popped popcorn (I used this method of making popcorn – it works perfectly every time!)
Pumpkin flavor marshmallows: For the binding agent and great flavor, use one 8-ounce package of Pumpkin Spice marshmallows.
Butter: You will need 3 tablespoons of butter to create a wonderfully rich treat.
Easy step by step on how to make Marshmallow Treats
Prep
Start by popping the popcorn and set aside in a large bowl. Then, coat an 8X8 inch baking pan with non-stick cooking spray (this is an important step, do not skip).
Cook mixture
Next, combine the marshmallows and butter in a saucepan, cook and melt, over medium heat, stirring until completely melted and smooth.
Once the mixture has completely melted, proceed to pour the marshmallow mixture over the popcorn and stir until the popcorn is well coated.
Then, scoop the entire mixture into the prepared pan and press down until evenly distributed. I usually spray the back of a wooden spoon with PAM Cooking Spray and use that to press the mixture into the pan. If you don’t spray the spoon first, it will stick and make it much more difficult. Sometimes I just spray my fingers and use those to press the mixture down.
Cool & set
I sprinkled some M&Ms on the top just for fun decoration and more amazing taste, but this is optional. Let the coated popcorn cool for about 20 minutes, then cut into squares, serve and enjoy!

HOW DO YOU STORE MARSHMALLOW POPCORN?
Keep your cooled and set popcorn inside of an airtight container or large resealable plastic bag. You can keep it at room temperature for up to 10 days, but I recommend eating it much sooner than that.
HOW LONG DOES IT TAKE FOR MARSHMALLOW POPCORN TO SET?
This treat will take about 15-20 minutes to cool and set at room temperature, but you can reduce that time by at least half if you let them set up in the refrigerator. If you prefer the taste and texture of these bars at room temperature just make sure to remove them from the refrigerator once set.
HOW DO YOU MAKE POPCORN ON THE STOVE?
I used to just use a large stockpot to make popcorn on the stove (which works great!), but I recently got this popcorn maker and it makes the whole process even easier. The popcorn cooks perfectly every time. To make popcorn on the stove:
- Put 1-2 Tbsp of coconut oil in the stovetop popcorn maker or in your stockpot. If you are using a stockpot, make sure you have a lid!
- Turn the heat on medium high and add about 6-7 “test” kernels to the pot. Put the lid on and wait for the kernels to start popping.
- As soon as the test kernels start popping, you can add the rest of the popcorn kernels. 1/8 cup of popcorn kernels will yield about 4 cups of popped popcorn, so you will want about 1/4 cup of kernels to make 8 cups of popped popcorn. I usually do a little bit extra though, it doesn’t have to be exact!
- Replace the lid and either continuously stir the handle on the stovetop popcorn maker or periodically shake your stockpot to prevent the kernels from settling in one spot and burning. As soon as the popping starts to slow down significantly, remove the pan from heat. That’s it!
