It’s no secret that we love s’mores! What’s not to love about chocolate, marshmallows and graham crackers? If you are really short on time, try our No-Bake S’mores Bars – it’s one of our most popular desserts for a reason! But if you have a few more minutes, try this baked version – they are even better than regular s’mores because the crust is so soft.
What are baked s’mores bars?
Baked S’mores Bars are made with a homemade graham cracker crust. The crust is made with graham cracker crumbs, but is soft and cookie-like in texture and consistency. Hershey bars are placed on the top of one graham cracker cookie layer, and then marshmallow creme is spread on top of the chocolate. Another graham cracker cookie layer is placed on top and then everything is baked together. So delicious!

- No campfire is needed! The weather and your location amy not always allow for campfires so traditional smores may not be an option, but these oven baked smores can certainly help to fill that void.
- It’s almost as easy as regular smores! Made with the same ingredients (plus a few more), this recipe isn’t too much more difficult than assembling a large pan full of smores.
- You can adjust the serving size. With a regular graham cracker you’re usually stuck with only one serving sized square, but with this baked versio of a smore, you can cut to make your slice larger or amsllaer depending on what you want, meaning that you can serve more people from the same ingredients.
Ingredients in Baked S’mores Bars
Butter – You will need 1 stick of butter to make the graham cracker cookie crust for the baked s’mores bars. Real butter works best!
Brown sugar and sugar – Just 1/4 cup of brown sugar and 1/2 cup of granulated sugar add the right amount of sweetness to the crust. For best results, make sure the brown sugar isn’t dried out.
Egg – Just one large egg will help to bind everything together.
Vanilla – Vanilla extract will help to enhance the flavors of the cookie crust. The higher the quality of the vanilla, the better.
Flour – All-purpose flour works best in this recipe.
Salt– Just 1/4 teaspoon of salt helps all of the other flavors to pop.
Graham cracker crumbs – You will need 3/4 cup of graham cracker crumbs. You can cheat like I often do and just pour them straight out of the box of crumbs that have already been crushed for you, or you can easily make your own crumbs. You will need about 5-5 1/2 full graham crackers to make the correct amount of crumbs. The easiest way to get fine crumbs is by placing the crackers in a blender and blending for just a few seconds.
Baking powder – One teaspoon of baking powder is the leavening agent in the cookie crust. Make sure your baking powder isn’t old or expired.
Hershey chocolate bars – You will need about 4-5 regular sized Hershey bars. You will break them into individual pieces and place them in a single layer across the crust. I like the traditional Hershey bars, but you can use dark chocolate Hershey’s or even chocolate chips if you prefer instead!
Marshmallow creme – You will need one 7 oz container of marshmallow creme, which is about 1 1/2 cups.
How to make Baked S’mores Bars
Prep
Preheat oven to 350° and grease an 8X8 or 9X9 pan. (You can also use a small casserole dish – like an 11X7.)
Make the crust
In a large bowl, cream the butter and sugars together and then add in the egg and vanilla.
In a separate bowl, whisk together the flour, graham cracker crumbs, baking powder and salt.
Add the dry mixture to the butter mixture and mix at a low speed until well combined.
Assembly
Divide the dough in half and press half of it into the bottom of your prepared pan. Place the chocolate bars evenly over the dough. Spread the marshmallow fluff evenly over the chocolate layer.
Add the top crust
The easiest way that I’ve found to make the top layer is to place the second half of the dough in a large (gallon sized) Ziplock bag and roll it out until it is about the size of your pan.
Use scissors to cut both of the long sides of the bag and pull up the top layer. Place the bag, dough side down on top of the marshmallow fluff and then peel the bag up.
Bake and cut
Clean up the edges and then bake for about 30-35 minutes. If you want to cut this into nice, neat looking bars, wait until cooled to cut. In our house, we prefer this warm so we eat it straight out of the oven in not-so-pretty spoonfuls!
When to serve Baked Smores Bars
This makes a delicious treat for any night of the week but you can just as easily let them cool and then slice them into serving sized squares for a camping or woodlands themed party. Even a sleepover could appreciate the sweet chocolate and marshmallow treat. You can serve this tasty dessert whenever you want but I recommend trying it soon!

How long are Baked S’mores Bars good for?
Baked S’mores Bars are good for up to 4-5 days if stored in an airtight container at room temperature. You can eat them at room temperature, but I think they taste so much better if you heat them up before eating. Microwave one serving for about 15-20 seconds and it’ll be perfect!
Can you swap out the Hershey bars?
Regular Hershey bars work best, but you can definitely use a different type of chocolate if you prefer. You can use dark chocolate Hershey bars or you can even just use chocolate chips. Semi-sweet or milk chocolate chips work great!
How many graham crackers to make 3/4 cup of crumbs?
You will need about 5-5 1/2 graham crackers to make 3/4 cup of crumbs. The easiest way to make the crumbs is by putting the graham crackers in a blender.
HOW DO YOU SOFTEN BUTTER?
I like to soften butter by using the defrost function on my microwave. If you need the full 1/2 cup cube of butter, you can leave it in the paper wrapper, otherwise, place the amount of butter you need in a glass or porcelain bowl. I use the lowest defrost setting on my microwave and just let it run for 20 seconds. Check the butter and see how soft it is by pressing it with a rubber scraper. If it is still not soft to the touch, meaning it doesn’t indent when you press into it, let it warm for another 5-10 seconds. Watch it closely! Butter softens very quickly.
