I normally double this homemade alfredo sauce recipe so that I can use an entire block of cream cheese, then I set aside a smaller portion of it for future meals while making the tomato alfredo pasta recipe down below. I love how the pasta recipe is so versatile and that you can use any seasonal vegetables like zucchini, eggplant, bell pepper, collard greens, or broccoli. It turns out great every time, so use what you have or whatever is on sale!
How To Keep Alfredo Sauce From Separating
When you are adding your ingredients to the hot saucepan, it’s important to make sure that you do so slowly. Adding cold milk to an already heated mixture can cause separation and so can letting your sauce boil. Milk will separate if it reaches high temperatures, so make sure you follow the recipe slowly and your heat isn’t too high and you should be fine!

-1 1/2 -2 TBSP Flour
-2 cups Whole Milk
-Half a block of Cream Cheese
-3/4 cup Parmesan Cheese {fresh or Kraft}

-Salt & Pepper to taste

-1 cup Alfredo Sauce
-1 can of Diced Tomatoes
-about 4-5 cups Cooked Pasta
-about 2 cups Vegetables, cooked al dente
-Parmesan Cheese, as a topper
How to Make Homemade Alfredo Sauce With Milk
Melt your butter in a saucepan on medium-low heat. Once the butter has melted, whisk in the flour.
Gradually add in the milk, whisking to combine as you go. I generally add it about 1/2 cup at a time, whisk, then wait for the milk to heat up and thicken a bit before adding more.
Once all the milk has been added and it’s hot {do not boil!} add the cream cheese. Whisk to combine. Heat the sauce back up before adding in the Parmesan cheese. Simmer this sauce until all is melted, and well mixed. Add in the salt, garlic powder and pepper to taste.

How to Make Creamy Tomato Pasta
Combine all of the ingredients and place them in an oven safe baking dish. Bake at 350 degrees F for about 20-30 minutes until the cheese has melted and the dish is heated all of the way through.

Can You Freeze Alfredo Sauce?
Yes! Normally I’d advise against freezing anything with too much dairy in it but having frozen and used this sauce so many times over the years, I know for a fact that it works out well! I love to freeze extra alfredo sauce and keep it stored for future meals, it makes mealtimes faster and delicious.

There are so many different things that you can add to your alfredo pasta including roasted garlic cloves, fresh herbs, and vegetables. Chicken and more parmesan cheese also do great with alfredo pasta too.
What To Do With Leftover Alfredo Sauce
Take your leftover cooled alfredo sauce and store it inside of an airtight container of a resealable plastic bag and store inside of your fridge for up to 3 days or in your freezer for up to a few weeks. If you don’t have enough sauce to make another pasta dish you can simply use it as a pizza topping instead of pizza sauce or bake it in a chicken casserole.
