Easy Chicken Club Appetizer
We love watching football in our house, but as much as we love the game, we love the food that goes along with it. Food and football, they go together like peas and carrots, peanut butter and jelly, you get the point…lol. These chicken club rolls ups are so easy to make and really, just about anything with bacon and cheese goes well with football. Serve them alongside some ranch dressing mixed with buffalo sauce, yum!

Chicken Club Roll-Up Ingredients
Chicken: You will need 1 cup of diced cooked chicken to start assembling these roll ups.
Bacon: Using 6 slices of bacon, cooked and crumbled, will give these roll ups amazing flavor.
Ham: Add in ½ cup of diced ham to add more protein and great taste.
Tortillas: You will need 15 tortillas to make this taste appetizer.
Cheese: Adding in 1 cup of shredded Colby jack cheese gives the filling mixture great texture and taste.
Tomato: Use 1 small tomato, diced (about ½ cup), to add a fresh and healthy addition to these roll ups.
Avocado: For more amazing flavor and texture, add in a ½ diced avocado.
How to make Chicken Club Roll-Ups with Bacon
Prep
For this appetizer you will need cooked chicken and bacon. You can prepare the chicken in a crockpot or baking in the oven, however you choose will work great. Here is a great recipe for shredded chicken and the easiest way to make bacon.
Once those are baked and you are ready to get started, dice the ham into small pieces and set aside. Also, diced the tomato and avocado into small cubes as well.
Get assembly started by heating a griddle to 400 degrees F. Once the griddle is hot, cook each tortilla for 30 seconds on each side. Once you flip the tortilla, it will puff up and go golden brown in spots, this is perfect and exactly what you want to happen. Remove the tortilla from the griddle and stack the tortillas to cool slightly.
Also, get the oven preheating to 350 degrees F.
Assembly
Next, in a large bowl, combine the cooked chicken, cooked and crumbled bacon, diced ham, cheese, tomato and avocado. Stir all ingredients together until combined.
Proceed to measure 1/4 cup of the chicken mixture per tortilla and roll up, enclosing the filling inside.
Line tortilla roll-ups on a baking sheet, closely together and bake for 12-15 minutes, until filling is sizzling and tortillas are lightly browned.
Serve immediately with a side of ranch dressing with buffalo chicken sauce or Sriracha mixed in (if desired).

How long are chicken club roll ups good for?
If stored in an airtight container, in the fridge, these roll ups will last for 2-3 days. They do taste best when fresh, so eat them quickly. If you do have left overs, you can reheat them in the oven at 300 degrees for about 8 minutes.
Can I make chicken and bacon roll ups ahead of time?
You sure can! Prepare all the ingredients, combine to make the filling mixture, roll them up and have them placed on the baking sheet. When you are ready to enjoy them, just pop them in the oven and bake.
Will other meat work for this recipe instead of chicken?

I would use them for Santa Fe veggie wraps! Put a little cream cheese on the tortilla and then top with tomato, avocado, corn, black beans, jicama and pepper jack cheese. One of my very favorite quick and easy meals!
