Double Chocolate Snack Cake - Butter With A Side of BreadI dug this lovely little recipe for chocolate snack cake out of a file folder that dates back to 2002. You know, before Pinterest. I have no idea where it came from, but I like it! It’s lighter than your normal cake since it’s made with applesauce and sour cream. It’s about 265 calories per piece, so not too bad. It’s more dense than cake, but lighter than brownies and I think it’s perfect for picnics or potlucks. You can serve it without frosting- it has wonderful flavor and it isn’t too sweet. Or you can top it with a scoop of vanilla ice cream, hot fudge, whipped cream and a cherry. Now THAT’S my kind of snack!

Double Chocolate Snack Cake

  • 1 1/2 cups flour
  • 1 cup cocoa powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 2 cups brown sugar, packed
  • 1 cup applesauce
  • 1 cup sour cream
  • 4 eggs
  • 1/4 cup oil
  • 1 cup chocolate chips, divided

Preheat oven to 350 degrees F.

Combine flour, cocoa powder, salt and baking soda and set aside.

In a medium bowl, whisk together brown sugar, applesauce, sour cream, eggs and oil. Add dry ingredients to wet ingredients and mix just until combined. Melt 1/2 cup of chocolate chips in the microwave for about 1 minute. Stir into cake batter.

Transfer batter to a 9×13 pan sprayed with non-stick spray. Sprinkle remaining 1/2 cup chocolate chips on top of cake. Bake for 42-45 minutes, until toothpick inserted comes out clean. Cool completely. Cut into squares to serve.

Recipe can be halved & baked in an 8×8 square pan for 30-33 minutes.
