Blueberry Smoothie Bowls - Butter With A Side of Bread

I have a smoothie almost every morning for breakfast but sometimes it doesn’t quite feel like a real meal since there is no actual chewing involved. Lately, I’ve been a new trend – the smoothie bowl. This is amazing because you can make your favorite smoothie, sprinkle some granola and fruit on the top and eat it with a spoon! This turns the smoothie into something that feels more like a meal than a drink, but with all the nutrients and flavors of your favorite smoothie!

This year, I have focused more on eating healthy and have been trying to make better choices at the grocery store. April is Earth month and Safeway is celebrating with their Every Cart Counts promotion.┬áIt’s important to pay close attention to the products you buy and even making small changes in your grocery shopping habits can make a big difference in environmental impact and your health. While shopping at my local Safeway, I decided to try Silk Vanilla Unsweetened Almond Milk and Earthbound Farms Frozen Kale – both products ended up being wonderful additions to my smoothie bowl.

BLUEBERRY SMOOTHIE BOWL

  • 2 cups Silk Vanilla Unsweetened Almond Milk
  • 1 cup frozen blueberries
  • 1 cup frozen mixed fruit (peaches, pineapples, etc)
  • 1/2 cup Earthbound Farms Frozen Kale
  • 1 banana, peeled
  • 2 Tbsp chia seeds

Pour the milk into a blender first, then add the other ingredients. Blend until smooth and then pour into bowls. Top with your favorite granola and/or fresh fruit. Enjoy!

Ingredients
  • 2 cups Silk Vanilla Unsweetened Almond Milk
  • 1 cup frozen blueberries
  • 1 cup frozen mixed fruit (peaches, pineapples, etc)

TOPPINGS:
  • granola (optional)
  • fresh fruit (optional)
Instructions
  1. Pour the milk into a blender first, then add the other ingredients. Blend until smooth and then pour into bowls.
  2. Top with your favorite granola and/or fresh fruit. Enjoy!
