Easy Stuffed Zucchini - Butter With A Side of Bread

Plentiful zucchini is one of my favorite things about summer! Seems like I gather it all from the garden and am constantly thinking how I can incorporate it into each and every meal. This is a simple, flavorful recipe for stuffed zucchini that everyone enjoys. Bonus too- you can make it all in the microwave, so no heating up the house!

Stuffed Zucchini

  • 2 medium zucchini
  • 2 TBSP dried breadcrumbs
  • 1½ tsp olive oil
  • 1 TBSP grated Parmesan cheese
  • ½ small tomato, diced
  • 1 tsp minced garlic
  • 1/8 tsp thyme
  • Salt to taste

Additional stuffing stir-ins:

  • 2 TBSP pine nuts
  • ¼ lb cooked Italian sausage

With sharp knife, cut zucchini lengthwise in half.  With spoon, scoop out zucchini leaving ¼-inch-thick shell.  Reserve zucchini flesh.

Cook zucchini shells in microwave safe dish for about 2 minutes.

Dice reserved zucchini flesh.  In microwave-safe bowl, place diced zucchini, olive or salad oil, diced tomato, garlic and thyme leaves; stir well.  Cook on High 2 to 3 minutes, until tender, stirring halfway through cooking.

Stir breadcrumbs and Parmesan into vegetable mixture.  Season with salt.  Mound an equal amount of vegetable mixture in each zucchini shell.

Arrange stuffed zucchini in a baking dish with stem ends toward edges.  Cook, covered, on High 2 to 3 minutes, until hot.  Let stand, loosely covered, 2 minutes.

If you’d like to grill it, place stuffed zucchinis in a grill basket and grill for about 10 minutes.

Arrange stuffed zucchini on warmed serving platter and enjoy!
