Ham and cheese scrambled eggs
It’s a simple scrambled egg recipe with the addition of other ingredients such as ham, cheese, ranch dressing, and chives giving it a wonderful taste, appearance, and texture you can’t beat anywhere else. This homemade savory scrambled egg recipe is one that goes with any good breakfast and can be prepared in minutes.
Ham & Cheese Scrambled Eggs Ingredients
Eggs: We will need to use 6-7 medium-sized eggs to have enough to share. I like to use 7 eggs whenever I make this recipe.
Ham: Adding in 1/2 cup of diced ham is a great way to use up leftover ham after the holidays. You can also buy ham pre-diced from the grocery store to cut down on effort.
Water: We want to use 1 tablespoon of water to help make the eggs nice and fluffy, but you could use milk if preferred.
Ranch: Adding 1 heaping teaspoon of Ranch dressing into the eggs helps both the flavor & the texture. It sounds odd, but it’s my secret ingredient!
Cheese: I like to use 1/2 cup of Cheddar Jack cheese for the ultimate flavor combination. You can also use Pepper Jack instead for an added kick!
Salt and Pepper: Added to taste is the addition of salt and pepper which will help to make this dish truly befitting of your tastebuds.
Chives: Also added to the taste are the addition of green chives. You can use fresh or dried but they’ll add a little flavor and color to every plate.
How to Make Ham & Cheese Scrambled Eggs
Heat a frying pan over medium heat and spray it with a bit of nonstick cooking spray to avoid the eggs sticking later.
Add in the diced ham and stir occasionally to help warm them up.
Crack your eggs into a bowl and add in the water and Ranch dressing. Whisk until the mixture is well combined.
Pour the beaten eggs into the frying pan with the ham and use a rubber spatula to mix gently.
Allow the mixture to cook, turning the eggs occasionally.
Once the eggs are nearly cooked, add in half of the cheese.
Stir the mixture to combine.
Remove the pan from the heat once the eggs have cooked completely. The time will depend upon how well you like your scrambled eggs to be cooked.
Top with remaining cheese and serve. Enjoy!

Can scrambled eggs be refrigerated?
If you don’t finish all of the scrambled eggs while they are nice and warm you can let them cool and then store them in an airtight container in the fridge for later. They can last up to 3-5 days this way but they will taste best if eaten sooner rather than later.
Can scrambled eggs be reheated?
Yes, you can reheat your scrambled eggs in the microwave on a plate or in a lid-topped skillet over medium heat. To help avoid the eggs from drying out, adding in a little olive oil or butter can help to maintain the moisture content.
What Can I add Instead of Ranch?
If you’d rather not add already made Ranch dressing, you can add 1/2 tsp dry ranch mix and 2 TBSP milk or cream to the beaten eggs. Instead of cream you can add sour cream or Greek Yogurt.
