It is so easy to make this layered Jello dessert, combining the simple, yet delightful ingredients, creating this amazing treat could not be easier. Although these fruit parfaits are definitely a dessert, I like the fact that they are fairly healthy since they mostly consists of fruit juice and fresh fruit!
What is Double Berry Parfait?
A parfait is typically described as a layered dessert served in a clear glass. There are so many different kinds of parfaits, I have a hard time choosing which is my favorite. Some are made with yogurt or custard, and most all include whipped cream and some type of berry too. For this recipe, we make the parfait base with Jello, we just love it in my house. We layer it with multiple types of berries and whipped cream of course, the results are a simply heavenly treat!

Double Berry Parfait Ingredients
Gelatin: For the base of this incredibly delicious parfait, you will need 2 envelopes of unflavored gelatin.
Sugar: Adding in ½ cup of sugar will make these perfectly sweet.
Juice: Use 4 cups of white cranberry peach juice, or any other flavor you prefer.
Lemon juice: For a great citrus flavor, add in 1 tablespoon of fresh or packaged lemon juice.
Blueberries: You will need 2 cups of fresh blueberries for a great fresh fruity flavor. You could also use blackberries, that would also taste delicious.
Strawberries: Adding in 2 cups of fresh strawberries, quartered, will be the second fruit in this double berry parfait. I bet raspberries would be great too!
Whipped cream: To top of this tasty treat, add a dollop of fluffy whipped cream!
Step by step on how to make Berry Parfaits
Gelatin prep
In a medium size sauce pan, stir together the unflavored gelatin and sugar. Then, add in 1 cup of the juice and cook over low heat, stirring constantly for about 5 minutes, until the gelatin completely dissolves.
After that, remove the pan from the heat and slowly stir in the remaining 3 cups of juice and the lemon juice.
Chill & assemble
Next, spoon the washed blueberries into a 2-quart bowl, or divide them among 6 sundae glasses. Proceed to add half of the gelatin mixture to the bowl or each glass, then refrigerate them for about 2 hours or until set, while leaving the remaining gelatin mixture at room temperature.
Once the blueberry gelatin half has chilled for 1 hour, with the other half of the room temperature gelatin, stir the strawberries into that mixture and then refrigerate that for 1 hour until it is partially set.
Once the blueberry mixture has chilled for 2 hours and the strawberry mixture for 1, proceed to spoon the strawberry mixture on top of the blueberry mixture to create a second layer. Again, refrigerate for about 3-4 hours or until completely set.
Serve
When ready to serve, top each serving/glass with a dollop of whipped cream. Serve immediately and enjoy!

DOES SUGAR FREE JELLO WORK FOR THESE PARFAITS?
While I have not tried this exact recipe with sugar free Jello, I don’t see any reason why it would not work out. Go ahead and try it out and let me know how good it tastes in the comments because I’m curious now too!
CAN I SWITCH UP THE FLAVORS IN THIS BERRY PARFAIT?
You sure can. Experimenting with this Jello parfait can be a lot of fun. If you would like, you can switch up the Jello flavor for mango, melon fusion, or even the tropical fusion blend and add mandarin oranges or pineapple chunks. Or you can go with the traditional strawberry Jello with fresh strawberry chunks, that is always delicious. Whatever your favorite Jello flavor and your preferred fruit, you can’t go wrong with this versatile recipe.
HOW LONG ARE JELLO PARFAITS GOOD FOR?
These Jello treats can last from 5-7 days if stored in an airtight container in the refrigerator. Be aware that the texture will change with each passing day, the sooner you enjoy these the better they will taste.
