Banana Crumb Muffin Ingredients
Flour: You will need 1 ½ cups of all purpose flour for these tasty muffins. I actually used 1 cup all purpose and ½ cup whole wheat, made them a tad bit healthier.
Leavening agents: To help the muffins to rising properly, use 1 teaspoon of each baking powder and baking soda.
Salt: Adding in ½ tsp of salt will help to naturally enhance the flavors in these muffins.
Bananas: For the base of this muffin recipe, use 3 mashed bananas.
Brown sugar: You need ½ cup of brown sugar to give these muffins a wonderful depth of flavor.
Eggs: To create amazing texture and help bind the batter, use 2 eggs.
Oil: Adding in ⅓ cup of canola oil will add the necessary fats needed to help the muffins be moist and fabulous.
Vanilla extract: Use 2 tsp vanilla extract so that every bite is well flavored. Use higher-quality vanilla for better results.
Crumb Topping
Brown sugar: Using ⅓ cup of brown sugar will make sure the streusel is sweet and wonderfully crunchy once baked.
Flour: You will need 2 tbsp of flour to create the streusel, this keeps it soft and less likely to dissolve when baking.
Cinnamon: For a lovely warm spice flavor, add ½ tsp of cinnamon.
Butter: Add in 1 tbsp of cold butter to add the fats needed for the crumb topping to hold together and bake perfectly.
How to make Banana Crumb Muffins
Prep
Start by preheating the oven to 375 degrees F. Then, line a muffin pan with paper or silicon cups and set aside.
Batter
In a small bowl combine the dry ingredients, the flour, baking powder, baking soda, and salt. Lightly mix with a whisk.
In a separate large bowl, mash the bananas with a fork. Then, add in eggs and oil and whisk lightly. Next, add the brown sugar and vanilla extract. Whisk just until all the ingredients are combined.
After that, combine the dry ingredients to large bowl with the wet ingredients. Set the whisk aside and use a rubber scraper to mix the batter enough so that everything is combined. Proceed to ladle out into the prepared muffin cups, filling each about ⅔ full.
Crumb topping
In a separate bowl, combine the brown sugar, flour, cinnamon and butter, for the crumb topping. Using a fork, smash the butter and combine with the other ingredients. Repeat this for a good 2 minutes or so, until the butter is incorporated into everything else. Then mixture will resemble wet sand, spoon about 1 tablespoon of it onto the batter in each muffin cup.
Bake
Place the muffin pan into the preheated oven and bake for 20 minutes, or when muffins turn golden. Cool and serve with butter of course.

How long are banana muffins good for?
When stored in an airtight container, at room temperature, these muffins can last about 3-5 days and still taste great. I do not recommend placing in the fridge as it doesn’t extend the shelf life much and does help them to dry out faster.
