Butter With a Side of Bread: Slow Cooker Sweet Potatoes and Cranberries
I’m going to admit that I’m not a big fan of cranberries or sweet potatoes, but my husband insists that we have them as part of our Thanksgiving meal.  I was thrilled to find this recipe because it’s easy and can be put together in the Crockpot and then cook itself while you focus on the more important parts of the meal.  It’s delicious- enjoy!
SLOW COOKER SWEET POTATOES & CRANBERRIES
6 medium sweet potatoes, peeled and sliced
2 cups cranberries
1/2 cup butter, melted
3/4 cup brown sugar
1/2 tsp salt
Place all of the sliced sweet potatoes in the crockpot and then dump the cranberries on top.  Stir the brown sugar and salt into the melted butter and then pour the mixture all over the cranberries and sweet potatoes.  Cook on low for 4-6 hours and then serve.  It really is that easy!  Enjoy!  (My husband thought that the potatoes weren’t quite sweet enough so he sprinkled a little bit of brown sugar on the top right before eating and declared it perfect.)
