NUTELLA BANANA MUFFINS

Butter With a Side of Bread: Nutella Banana Muffins
We go through a lot of Nutella at our house and so I knew this recipe would be a hit with my kids.  There is only a tiny bit of Nutella in each muffin, but it is just enough to make them seem like a treat even though they are actually fairly healthy!  This batch was gone within an hour and my kids were immediately asking me when I was going to be making them again – this recipe was a huge hit!
NUTELLA BANANA MUFFINS
 
1 cup all-purpose flour
1 cup whole wheat flour
2 tsp. baking powder
1/2 tsp salt
1/2 cup butter, softened to room temperature
3/4 cup sugar
2 eggs
3 over-ripe bananas, mashed
1 tsp. vanilla
1/4 cup Nutella
Line a muffin tin with paper liners or coat with cooking spray.  In one bowl, combine flours, baking powder and salt.  In another bowl, beat butter and sugar with an electric mixer for about 2-3 minutes.  Beat in the eggs, vanilla and mashed bananas until smooth.  Gradually add the flour mixture.  Divide the batter into the 12 muffin cups.  Scoop 1 tsp. of Nutella on top of each muffin and swirl it into the batter with a toothpick or knife.
Bake muffins at 350 for 20-22 minutes.  Enjoy!
