Tortilla Soup with Black Beans Ingredients
Olive oil: You will need 1 tablespoon of olive oil to get this recipe started.
Garlic: Adding in 2 cloves of garlic, minced, will give this soup a nice pungent flavor. You can use fresh garlic or store bought minced garlic, either way will be great.
Chili powder: Using 1 1/2 teaspoons of chilli powder will give this amazing soup a wonderful punch of flavor.
Tomatoes: You need 1 14.5-ounce can of diced tomatoes for a tangy taste in this dish.
Black beans: For great protein in this soup, use 1 14.5-ounce can of black beans, rinsed and drained.
Chicken broth: Adding in 1 14.5 ounce can of chicken broth gives this great consistency.
Water: Using 1 cup of water provides more liquid for this soup.
Sweet corn: You will need 1 14.5-ounce can of sweet corn for a nice buttery addition to this soup.
Lime juice: Use 1 tablespoon of lime juice to give a nice blast of citrus taste in this dish.
Chicken: Add in 1 cup of shredded chicken to make this a more robust and full meal. You can choose to leave this ingredient out if you would like to make this a meatless meal.
Tortilla chips: You need 2 cups of slightly crushed tortilla chips for this recipe.

How to make Tortilla Black Bean Soup
In a large sauce pan or pot, heat the olive oil over medium heat.
Add in the minced garlic and chili powder, cook for about 1 minute.
Next, add in the diced tomatoes (with the juice), black beans (rinsed and drained), chicken brown, sweet corn (drained) and 1 cup of water.
If you are adding in the cooked shredded chicken, add it in now. You can either use a rotisserie chicken to make it super simple or you can make the chicken in the crockpot ahead of time.
Bring this mixture to a boil, then reduce the heat to simmer for 1/2-1 hour.
Then, add in the tortilla chips (slightly crushed, you want to break them in half at least). Cook for about 2 minutes until the chips have softened.
Remove from the heat completely and add in the lime juice, stir to combine. Season with salt and pepper if desired.
Serve in individual bowls, add additional toppings to each bowl if desired and enjoy!

You can make this soup vegetarian or vegan by eliminating the shredded chicken and using vegetable broth instead of chicken broth. Add vegan cheese to the top or skip it entirely. However, there are so many great alternative options these days, you do not have to miss out due to dietary restrictions anymore!

It should be stored in the fridge and will last 3-5 days in an air-tight container. When you are ready to enjoy again you can heat it up in the microwave for 1-2 minutes or reheat on the stovetop.
